I was looking for a fun and impressive
recipe to include in the newsletter to share
with you so I went straight to the coolest
place I know in the Byward Market...Play
Food & Wine . Renowned chef Michael
Moffatt provided me with one of their favourite
recipes Homemade Gnocchi with Smoked Salmon.
It’s sure to be a hit with any crowd!

Homemade Gnocchi
with Smoked Salmon,
Basil Pesto & Pea Shoots
1 recipe gnocchi (recipe
follows)
8 oz smoked salmon
1 recipe basil pesto (recipe follows)
10 g pea shoots
Blanch gnocchi in boiling
salted water until floating, about 2 minutes.
Drain and transfer to frying pan with olive
oil. Add smoked salmon & pesto, and
sauté until warm. Garnish with pea
shoots.
Gnocchi
3lbs fingerling potatoes
2 eggs, lightly beaten
1½ c flour
1 tbsp parmesan
1½ tsp unsalted butter, melted
1½ tsp e.v. olive oil
1½ tsp salt
¾ tsp black pepper
Roast potatoes, and then
pass through food mill or ricer. Combine
other ingredients then cut in potatoes with
bench scraper until just combined. Cut off
small piece of dough and roll into a long
log, approx. 1” thick. Cut into bite
sized pieces. Keep refrigerated up to 24
hours or freeze up to 1 month.
Basil
Pesto
1 bunch Basil
½ bunch Parsley
¼ cup Pine Nuts, toasted
1 cup Extra Virgin Olive Oil
Salt & Pepper to taste
Finely chop Basil, Parsley,
and Pine Nuts. Slowly Drizzle in Olive Oil
while stirring until paste forms. Season
with Salt & Pepper.
Serves 8 as appetizer
